It sounds to me like you're taking the best approach possible. It's entirely up to her to reconcile any conflict of faith between your relationship and Scripture you've pointed out. Keep doing what you're doing. From the sound of it, you are being respectful of, or even enthusiastic about, her faith. In the end, relationships that are based more on love and kindness and personality are more successful than those who only require a faith-based litmus test. If she ends up requiring that test, be true to her and yourself or risk ruining what's left of the relationship.
